A great washed coffee from Colombia is one of three of our menu’s constant staples. This offering is always a workhorse, which makes the purchasing of it high stakes. Not only does it need to have a clean and bright acidity, that acidity must be balanced with a good amount of sweetness, underlaid with a pronounced body and finish. This is because it needs to be able to stand alone as a good filter option, while also providing a balanced oomph to espresso blends. Putting together a great espresso blend is no easy feat, given that the margin of error is so low with the intense pressure the coffee is put through while being extracted.
This time around, we chose this lot from the ASOPEP association, which was founded in response to the need to organize a way of interacting among the 162 members of an association with several objectives: to market their own coffee production, to form their own and to design their own farm conservation model to guarantee resources to future generations. We’re happy to continue our relationship with Equation Coffee, who provided the last version of this offering in the previous harvest cycle. In the cup we find hints of berries and citrus fruit, a juicy body, whistling clean cleanliness, and good structure.
